Ingredients

  • 1 tablespoon Olive Oil
  • 1 cup Onions, sweet, raw
  • Green Sweet Peppers
  • 1 Red pepper
  • 2 Garlic clove
  • teaspoon Spices, cumin seed
  • 1 Red Tomato
  • 500 gram Beef flank
  • 60 milliliter white wine
  • 3 cup Soup,stock, chicken
  • cup Tomato Puree, canned puree with salt
  • 4 Carrots, raw
  • 2 Raw potato
  • 2 tablespoon capers
  • 1 tablespoon Fresh Parsley
  • 1 teaspoon Sea salt
  • teaspoon Spices, pepper, black

Preparation

In large saucepan, heat oil over medium heat. Add onion, red and green peppers, garlic and cumin. Sauté, stirring frequently, until peppers turn golden brown. Add tomato and sauté for 1 minute. Season meat with salt and pepper. Add meat to vegetables; sauté for 2 minutes on each side.
Cook over high heat; add wine and bring to a boil. Add broth and return to a boil. Cook over medium‑low heat, and simmer, uncovered, for 30 to 40 minutes, or until meat becomes tender. Occasionally, remove foam from the top.
Add tomato sauce or purée, carrots and potatoes; stir. Boil for 15 to 20 minutes or until meat and vegetables become tender and sauce thickens. Add capers.
Using two forks, shred beef into thin slices. Boil for 3 minutes so meat takes in flavor of sauce. Remove from heat; sprinkle parsley over meat.
Makes 4 servings.

Cooking Tips

  • Use as little fat as possible, and remove all visible fat from meat before cooking.
