Ingredients

  • 2 tablespoon vegetable oil
  • 1 cup Onions, sweet, raw
  • 1 Garlic clove
  • 1 Peppers, sweet, green, raw (medium)
  • 2 Tomato
  • teaspoon Salt
  • 1 teaspoon Spices, pepper, black
  • 2 cup Cooked red beans
  • 1 cup Rice, white, medium‑grain, raw, enriched
  • 2 cup water

Preparation

  1. In a casserole, heat the vegetable oil; add the onion and garlic. Stir fry until the onion gets tender. Add the tomatoes and the green peppers, stir until the mixture is well cooked. Season with salt and pepper. Stir in the beans, add the rice with the water, mixing well. Cover the casserole and cook over low heat until the rice is well cooked and the water is absorbed. It takes about 20 minutes. Serve hot.
