Ingredients

  • 1 cup mushrooms
  • 250 gram Rice Arborio
  • 2 tablespoon Olive oil
  • 2 Garlic clove
  • 2 tablespoon Parsley
  • cup Onions, sweet, raw
  • cup Vegetable stock
  • 8 teaspoon Parmesan cheese, topping, fat free
  • 1 tablespoon Powder tarragon
  • teaspoon Spices, pepper, white

Preparation

Sauté mushrooms over medium‑high heat just a minute or so in 2 teaspoons olive oil, adding the garlic and parsley once the juices begin to run. Remove from the heat, cover, and set aside.
Sauté the onion in the rest of the oil over low heat; cover with a lid for 3‑4 minutes. Then, add the rice and stir well. Add a ladleful of the hot stock and simmer, stirring until absorbed. Add another ladleful of stock. Continue adding the stock a little at a time, and let it simmer until the rice absorbs the liquid before adding more. When you've added all of the stock, and the rice is fully cooked, add the cheese and tarragon. Season with pepper. Add the mushrooms with all its juices, and serve.
Makes 4 servings.
