Ingredients

  • 4 Raw potato
  • 4 red tomatoes
  • 1 tablespoon vegetable oil
  • teaspoon Sea salt
  • teaspoon Powdered oregano
  • teaspoon Spices, pepper, black
  • Garlic clove

Preparation

Wash potatoes; cook in salt water until slightly tender. Peel and slice. 
Blend tomatoes and strain; sauté in oil. Add salt, pepper, garlic and oregano. Add potatoes and finish cooking, stirring constantly so they absorb the seasoning.  
Makes 5 servings.

Cooking Tips

  • Use vegetable oil in moderation instead of margarine or butter.
