Ingredients

  • 4 cup Pumpkin puree
  • 2 tablespoon Olive oil
  • 1 cup Onions, sweet, raw
  • teaspoon Salt
  • 2 Red pepper
  • 1 clove Garlic clove
  • teaspoon Spices, pepper, black
  • teaspoon Spices, pepper, red or cayenne
  • cup Yogurt, plain, skim milk
  • 225 gram Cheese feta

Preparation

  1. Preheat oven at 375º F. Place mashed pumpkin in a bowl. Heat olive oil in a skillet. Add onion and sautée at medium heat for about 5 minutes. Add salt and bell peppers. Sautée for another 5 minutes or until the bell peppers begin to soften. Add garlic, pepper, cayenne pepper and sautée a little longer. Add the sautée mixture, yogurt and feta cheese to the mashed pumpkin and combine. Pour over a baking dish. Bake uncovered for about 25 to 30 minutes or until the casserole is bubbly.

Cooking Tips

‑You may find the mashed pumplin canned, but it is best if you prepare it yourself, this way you reduce your sodium intake. ‑ You may substitute the pumpkin for other types of squash.
