Ingredients

  • cup Lemon juice
  • 1 cup Onions, young green, tops only
  • 5 red tomatoes
  • 3 tablespoon Parsley
  • 3 tablespoon Coriander
  • teaspoon Salt
  • teaspoon Spices, pepper, black
  • 360 gram Flounder
  • 2 tablespoon Olive oil

Preparation

  1. Wash fish fillet under cold running water and pat dry with paper towel.
  2. Cook and cut fish into bite‑size pieces.
  3. In a large bowl, mix fish pieces with 1 1/2 cups lime juice, making sure that fish is well covered
  4. If necessary use more juice.
  5. Chill and refrigerate for 1 hour.
  6. Toss well and refrigerate another hour.
  7. While fish is marinating, mix chopped onion with the rest of the lime juice, until onion is well covered.
  8. Refrigerate. After the 2 hours, add onions, tomato, parsley and cilantro to fish.
  9. Toss well and add salt and pepper.
  10. Refrigerate for 2 more hours.
Makes 4 servings.

  • You should try to eat fish more often, as it is a good source of omega‑3 fatty acids, a heart‑healthy fat.
  • This low‑calorie, low‑fat recipe is an excellent idea for a summer day! Serve with soda crackers and enjoy.
